5 Best Zucchini Recipes for Dessert

There’s NOTHING like a great zucchini recipe. These wonderful squash give and give again, and the best part is that you can use them to make just about anything! While there are lots of delicious main dish recipes that use zucchini (and of course they’re great grilled on their own too) I wanted to focus on what, to me, is best of all: zucchini dessert recipes.

I’ve compiled a list here of five of my family’s favorite zucchini recipes for dessert. We try lots, and I’ll add to this list as time goes on, but for my money these are the best of the best. I can make these recipes any day of the year and feel totally and completely content. And since they use up zucchini when you get too much of it, they’re a win-win!

All of these recipes can use frozen zucchini as well, so if you’re inundated just shred it and freeze it for later. Then you can have the delightful rich moistness of a zucchini dessert in December, April, October… literally whenever!

Zucchini Brownies

While they’re called brownies, I think they’re more like the world’s perfect chocolate cake! Already rich and chocolatey, the zucchini gives this dessert a soft, moist texture.

In addition to the great taste, the brownies can be mixed by hand easily and require no eggs. You’ll need 3 cups of zucchini to make a 9×13 pan.

Zucchini Chocolate Chip Cookies

The cookies have a delightfully cakey inside with a crunchier outer shell, along with plenty of spices like cloves and nutmeg. We like to double or triple the recipe, then freeze the extra ones. They’re even great without reheating! It takes 1 cup of zucchini per 3 dozen cookies.

Zucchini Chocolate Chip Muffins

These muffins have been a staple in our family throughout my life. Spicy, chocolatey, and perfectly sized for a snack, breakfast, or dessert, they are a highlight of any time of year you make them. You can easily double or triple this recipe too, then put the excess ones in the freezer. Nothing beats one of these muffins warmed up in the microwave, especially when the chips melt. One dozen muffins will use 1 cup of zucchini.

Zucchini Cupcakes

For a more decadent dessert, try these zucchini cupcakes. We’ve been making them for many years, and no other cupcake recipe compares as far as I’m concerned. The spices pair perfectly with the caramel frosting. The recipe uses up 1-1/2 cups of zucchini.

If you’re looking for a slightly healthier dessert – especially one that doubles as a snack or breakfast item – this whole wheat zucchini bread recipe is a winner. You’ll get two loaves using 2 cups of zucchini.
